Hailing from the Dauphine, between Provence and the southern Rhone, this splendid little soft-bodied cows milk cheese runs a Gamut of flavors as it ages. When young it is mild with a yeasty flavor and slightly tart finish. If properly aged until it is Runny and soupy the flavor is much more pronounced and pungent. The picture is of this cheese in it's ripest stage, this cheese will get to you at a much younger stage, with less mold.
