A specialist of soft ripened cheeses, the Rouzaire Company puts out a commendable line of cheeses that due to low temperature Pasteurization is allowed to enter the US. We are certainly lucky to have them as they give many of the nuances of the real Thing. Brie de Nangis was originally an artisan cheese made around the town of the same name. Though no longer produced there, it remains true to the original style. It is much smaller than its bigger sibling, Fromage de Meaux, but shares many of the Same texture and flavor characteristics.
