Fondue as we know it today originated in Switzerland as a way of using up hardened cheese and surviving the bitingly cold winters when fresh food was scarce. Peasant villagers would prepare a mixture of Emmenthaler and/or Gruyere cheese and wine, melted in a communal pot. Today, we have the luxury of fresh cheese and freshly baked bread all year round, and we have a more varied selection of cheeses to drop into our fondue pots!
